You should just call me the Question Queen or something, with me and all my questions I ask you guys...

Anyway, I was just wondering if I should capitalize and/or italicize ballet moves.

There's no need to capitalize them, but you could italicize them. Most of the steps/moves have French names and it's common to italicize non-English words in an English manuscript.

I wouldn't capitalise them. English isn't big on capitalisation and throwing caps around like that just seems like you're shouting to draw attention to the word. No need for it. As for italics, I think that's entirely up to your own preference, to be honest. I've seen it done both ways - more with music terms or fencing moves, not ballet, but I guess it's the same principle, right? Sometimes italicising what is, after all, part of the English language can seem a bit like you're making it exotic on purpose; at other times it really works. It's really up to what you prefer and what you feel fits better in the story.
